First, let us discuss what truly constitutes a true tea. All true tea comes from the same plant- Camellia sinensis. Many beverages are called "tea" but only green, oolong (also known as wu-yi tea) and black teas are the only true teas. Anything else is an herbal drink or tisane. Rooibos tea falls into the latter category as it is not technically a true tea. Aspalathus linearis or red tea comes from a plant that is not related to Camellia sinensis at all. In the West, rooibos is typically known as red tea. This South African tisane is not a true tea. It comes from a plant that is closely related to legumes- the same family as beans. Also called rooibos, it is grown in the in the Cederberg mountains of South Africa where it has been enjoyed for generations for its sweet nutty taste and curative properties. It is traditionally processed much like tea and is taken in South Africa with milk and sugar, but outside of South Africa it is traditionally drunk without those additions and is brewed like a black tea. Being fully oxidized, this magnificent beverage is processed much the same way as a black tea but without the bitterness associated with brewing black tea too long. Although, there is a version known as green rooibos and it undergoes the same process as a Chinese green tea. The name of this nutty yet sweet, excellent beverage stems from the color of the brew which delivers a reddish brown color and has been used by South African bushmen for centuries to treat a wide variety of ailments ranging from skin maladies to colic.
